Beef Burger & Rutabaga Fries

Rutabaga is an under-served root vegetable that can be cut up, seasoned and oven-baked to make low carb low calorie fries for your burger.

Ingredients

  • 7 oz ground beef lean
  • 2-4 iceberg lettuce leafs
  • 1 cup rutabaga julienned
  • 1/2 cup celery chopped
  • 1/2 cup green onions
  • 1/4 cup green chilli peppers
  • 1/2 Tbsp chili powder
  • 1/2 Tbsp oregano
  • 1/2 tsp garlic minced
  • 1/2 tsp parsley
  • 1/2 tsp horseradish
  • 1/4 tsp soy sauce
  • 1/4 tsp paprika
  • 1/4 tsp grape seed oil
  • sea salt & pepper to taste

Preheat the oven to 425°

In a medium sized mixing bowl, mix together rutabaga, chilli powder, oregano, and grape seed oil.

Now, place rutabaga fries evenly on a baking sheet (spray sheet with oil first); place in the oven and let bake for 30 minutes flipping half way through.

Meanwhile, in a medium sized bowl mix together beef, celery, chilli pepper, oregano, onions, garlic, parsley, horseradish, soy sauce and paprika; make a patty.

In a hot non-stick pan with grape seed oil, add patty; let cook.  Once patty is cooked, serve on a plate by using the lettuce leafs as a bun with rutabaga fries.
