Cauliflower Fried Rice

A grain-free take on fried rice.

Ingredients:

  • 1 bunch of chopped green onions
  • 4 eggs, beaten
  • 1 large onion
  • 1/2 stalk of celery
  • 2 cans of mushrooms
  • 1 whole head of cauliflower
  • 1 whole pack of bacon, sliced
  • 1 tsp of Bragg soy sauce

Directions:

In a large bowl grate, a whole head of cauliflower.  The cover with saran wrap and microwave for 3 minutes.

In a frying pan cook the bacon slices, when done put it on paper towel to set aside.

Heat up another frying pan to cook the scrambled egg then set aside.

In the large frying pan cook onion, celery and mushroom until onion and celery are soft.

Add all other ingredients. Mixed well then soya sauce to taste.
