Ingredients
- 1 package of potato puree mix
- Optional spices (onion powder, garlic powder, chives, and fresh herbs)
- 1 small zucchini
- 1 small finely diced red pepper
- 1 egg white
Directions
1. Grate Zucchini and squeeze excess water out of it using paper towel
2. Mix 1 IP Potato Puree Mix with 2 oz water in mixing bowl
3. Add spices of your choice
4. Stir in zucchini, red pepper & egg white
5. Cook on no higher than a Med Heat, in a tsp of olive or grape seed oil
